
SWEET POTATO AND POACHED EGG HASH
Ingredients:
1 tablespoons of coconut oil
1 medium sweet potato, chopped into cubes and roasted
1 egg
large handful of spinach
Method:
Heat the oil in large frying pan. Add in the sweet potato cubes and keep stirring to avoid the potato burning. Meanwhile boil a pan of water.
Add the egg to the boiling and cook for approximately 3 minutes for a runny poached egg.
Add the spinach to the pan of sweet potato and stir for about a minute until the spinach has wilted.
Serve the poached egg on top of the sweet potato mix.
