QUINOA, CARROT AND LENTIL SALAD
(Serves 2)
This recipe was inspired by Deliciously Ella but I have adapted to make it baby friendly
Ingredients
100g quinoa
1 tin of green lentils (drained and rinsed)
2 carrots, peeled and grated
50g raisins (soak in boiling water)
1 teaspoon of cumin
1 teaspoon of cinnamon
1 teaspoon of turmeric
handful of mixed seeds for serving
handful of rocket/watercress/ spinach for serving
For the dressing:
2 tablespoons of olive oil
1 tablespoon of tahini
1/2 tablespoon of maple syrup
juice of 1 lime
1 tablespoon of apple cider vinegar
Method
Cook the quinoa (As per packet instructions). Add the spices half way through cooking.
Whilst cooking mix up the dressing ingredients in a little pot and leave to one side.
When the lentils have finished cooking remove from the heat and stir in the carrots, raisins and then add half the dressing. Mix well.
Dish up into two bowls and then add the rest of the dressing, a handful of seeds and the salad mix.
I've added a little extra carrot for decoration but not essential.
