LEMON AND COCONUT ENERGY BALLS
Ingredients
10 Medjool dates
100g almond butter
Juice from 2 lemons
Desiccated coconut (to roll in after)
Method
All all ingredients (bar coconut) to a food processor and blitz for approximately one minute.
Roll into balls (roughly a tablespoon of mixture per ball). I managed to get 10 balls from these ingredients.
Roll in the coconut and then store in the fridge. Will keep for up to a week.
