COCONUT AND MANGO ENERGY BALLS

(Makes 8 balls)

Ingredients

50g dried mango

6 medjool dates 

100g cashew butter

6 tablespoons of oats

4 tablespoons of desiccated coconut

2 tablespoons of water


Place the oats, mango and dates into a food processor and blitz for a minute or so until they start breaking down.

Add the coconut and cashew butter and then blitz again for a few minutes. 

Add the water if required (I needed it to get the mixture to start sticking together).


Roll into 8 balls and then pop into an airtight container and keep in the fridge.
